The young specimens that grow in our farm have been selected at river mouths while swimming back towards the inner watercourses. They vary in color from brown to grey, yellowish or blackish; the abdomen is yellowish or silver white. The color changes depending on the habitat and developmental stage. The males reach 1 meter in length, the females can be up to 1.5 meters long. This exclusive and highly appreciated crustacean has a very delicate taste, and is usually cooked whole. Light or brown in color, like all crustaceans it becomes pink or reddish after boiling. It can reach up to 16 cm in length. It fears light and tends to lie on the bottom of the tank protecting itself from light by hiding behind other specimens. This fish lives in seawater, or in freshwater during the spawning season. Its meat is white and delicious. Usually raised in large tanks, it can be found fresh throughout the whole year. The color is dark grey on the back, lighter on the abdomen. The length ranges from 50 cm up to 4 meters.
